Originally hailing from Malaysia, Huda currently lives in Japan. But no matter where she roams, her heart remains firmly rooted in the flavors of home. Telur Dadar Mayonis is very special to Huda, taking her back to a time when she was just a curious 10-year-old. This dish started with a TV commercial featuring a mouthwatering omelette made with a secret ingredient – Lady’s Choice mayo. Inspired by what she saw, young Huda was on a mission to recreate this dish. Talk about dedication and determination at such a tender age!

To make this omelette, all you need is eggs, mayo, shallots, chilies, green onions and some oil. Once your ingredients are prepped, add them all to a bowl. With a hand mixer or whisk, beat everything together until it’s foamy. Then heat a generous pour of oil in your pan and add in the egg mixture. Let it sizzle and bubble until the bottom is cooked, then flip it. Transfer to a plate, garnish with mayo and serve with a side of rice.

Telur Dadar Mayonis

Ingredients
  

  • 2 eggs
  • 1 heaping Tbsp mayo
  • 3 small shallots sliced thinly
  • 2 small red chilies sliced thinly, more or less depending on your preference
  • green onions chopped, as much as you like
  • neutral oil

Instructions
 

  • Chop your veg into bite sized pieces
  • Combine everything, including the mayo to a bowl and beat until really foamy.
  • It should look like this.
  • Heat up a generous pour of oil and add eggs when its hot. Flip when the bottom is cooked.
  • Serve right away with rice and a little mayo on top!
