Ingredients
  

  • 2-3 medium-sized tomatoes
  • 1 large onion
  • 2-3 green bell peppers
  • 3-4 eggs
  • 1-2 Tbsp olive oil and/or butter
  • salt, black pepper, and optionally red pepper flakes to taste

Instructions
 

  • Finely chop the tomatoes, onion, and peppers.
  • Heat the olive oil and/or butter in a pan. Sauté onions until they are lightly browned/yellow. Add the chopped peppers and sauté for a few minutes. Add the chopped tomatoes to the pan and cook on medium heat until the tomatoes reduce and thicken slightly. Season with salt, black pepper, and optionally red pepper flakes.
  • Crack the eggs directly into the pan. Stir the eggs into the tomato and pepper mixture, scrambling them as they cook.
  • Once the eggs reach your desired consistency, remove the pan from the heat. Serve right away with bread on the side if desired.
