You’ve probably seen photos of these golden-brown soy eggs all over social media. They’re called Mayak Gyeran or “drug eggs” in Korean. That name is so fitting because they are insanely addictive!
This tasty dish was submitted by Shannon, a Korean-American living in France. Shannon has such a deep love and appreciation for Korean cuisine that was instilled by her mom cooking authentic meals while growing up. You can hear the nostalgia in her voice when talking about this dish!
Making Mayak Gyeran is surprisingly simple. You start by soft boiling some eggs to get that perfect, jammy yolk texture. Then you marinate the peeled eggs in a soy sauce mixture full of garlic, green onions, sesame seeds and a touch of sweetness from rice syrup.
The marinade is what gives the eggs their golden brown hue and incredible flavor. The soy sauce packs an umami-rich saltiness while the rice syrup balances it out with just the right amount of sweetness.
Once marinated for a few hours (or even better, overnight), you’re left with the most unbelievably delicious and craveable soy sauce eggs. The marinade infuses into the jammy yolk creating this insanely luscious, almost custard-like texture that is so delicious! The whites sort of caramelize and turn this beautiful golden brown color while still staying tender on the inside. Honestly, I could have eaten the entire batch solo!
If you’re looking for an easy but super flavorful egg dish, you have to try these Korean marinated “drug eggs.” They have such incredible sweet-salty-savory vibes going on that will have you craving them constantly. Fair warning: they live up to that addictive name!
