Ingredients
  

  • 1 potato, boiled boiled
  • salt to taste
  • black salt to taste
  • ½ tsp chili powder optional
  • ½ tsp cumin
  • ¼ tsp amchur
  • 1 green chili chopped
  • fresh cilantro chopped
  • mustard oil
  • white bread slices
  • ghee
  • cheese of your choice, optional
  • chutney or ketchup for serving

Instructions
 

  • Mash your potatoes and add in spices, chili, and cilantro. Taste for seasoning and adjust.
  • Toast two pieces of bread on one side, using generous amount of ghee.
  • Fill the mash in between the toasted sides. You can also add some cheese of your choice if desired at this point.
  • Toast the sandwich with lots of ghee, now in the untoasted side, on medium heat.
  • Once it's golden brown and crispy, and cheese is melted if used, it's done!
  • Enjoy with chutney, ketchup, or as is.
