Kapak Ayam Madu a.k.a. Grilled Honey Chicken Wings are not just any wings. These sweet and spicy chicken wings have a vibrant red color and a smoky flavor that’s so addictive.

Najah, from Malaysia, sent me this awesome recipe. She shared that Kapak Ayam Madu is a special treat she enjoys during Ramadan. Her family loves it so much that they snack on it in the car on the way home, often before the wings even make it to the dinner table! That’s how you know they’re good :)

This dish is all about that sweet and spicy flavor that makes Malaysian food so special. The honey creates a sticky glaze that balances out the kick from the chili powder, and the smoky charcoal flavor (I actually used my air fryer) adds another amazing layer. And that color? Kepak Ayam Madu

Ingredients
  

For wings

  • 2 lb chicken wings⁣
  • ½ bulb garlic
  • inches ginger
  • water as needed
  • ½ Tbsp butter
  • 1 chicken bouillon cube
  • 2 Tbsp honey
  • 2 Tbsp brown sugar
  • 3-4 Tbsp chili powder more or less depending on your taste
  • 2 Tbsp oyster sauce
  • salt & pepper to taste
  • 4-6 drops red food coloring

For sauce

  • ½ cup water⁣
  • 1 Tbsp cornstarch mixed with the above ½ cup water to make a slurry
  • sweet soy sauce to taste
  • brown sugar to taste (for a sweeter sauce)

Instructions
 

For wings

  • Wash the chicken wings and drain until dry⁣.
  • Blend garlic and ginger with ¼ cup water (more or less depending) until smooth.⁣
  • Place chicken wings in a container, add the blended mixture, chicken cube (crushed), honey, brown sugar, chili powder, oyster sauce, salt, and black pepper. Mix well.⁣
  • Melt the butter. Let it cool slightly. Add it to the chicken mixture along with red food coloring. Stir well.
  • Marinate and refrigerate for 4 hours or overnight.⁣
  • Take out the chicken, but reserve the marinade for the sauce! Heat a grill or use an oven, air fryer, or charcoal grill to cook chicken until done. Adjust to taste.⁣

For sauce

  • Pour the remaining marinade into a pan. Rinse the marinated chicken container with a little water and add it to the pan. Add cornstarch slurry, sweet soy sauce, and sugar to taste. Stir until well combined.⁣
  • Simmer over medium heat, stirring constantly, until the sauce thickens and boils. Turn off the heat.⁣
  • Serve chicken wings with sauce!
