Halo Halo isn't the only Filipino shaved ice worth talking about

Get ready to make your inner child’s dreams come true with this recipe. As part of my latest series, I’ve been exploring different shaved ice recipes from around the world. And as of right now, the Philippines might just have the most fun contribution with Iskrambol.

Also known as “Ice Scramble,” Iskrambol is a bright and whimsical looking creation that’s blended from a base of condensed milk, banana extract, and of course ice. Once shaved down, the sweet ice is topped with a variety of toppings that are then “scrambled” together using a straw. Hence, the name. Those toppings include milk powder, chocolate syrup, mini marshmallows, and even a few rainbow sprinkles – because, why not? Just to make things even cuter, a few drops of red food dye are also added to give Iskrambol a bright pink hue. You can see why my inner seven-year-old was thrilled by this shaved ice situation.

As it turns out, children all across the Philippines have a similar reaction to Iskrambol. Stalls or trucks frequently line the streets of elementary schools, hoping to tempt both children and adults into a cup of ice scramble. Carmel, who contributed this recipe, has vivid childhood memories of Iskrambol. Growing up in Pampanga, the culinary capital of the Philippines, she would actually chase down the Iskrambol vendors on hot summer days just to get her hands on one of these sweet treats.

Of course, Iskrambol isn’t the only cold dessert served around the Philippines. Many of you may already be familiar with Halo-Halo: Another extremely popular shaved ice dessert throughout the Philippines. The two dishes definitely have some overlapping qualities, but are still distinctly different. With Halo-Halo you’re likely to encounter some more serious or adult toppings like sweetened red beans, jackfruit, fresh fruit, ube, or pinipig to create a balance of flavors and textures. However, Iskrambol is all about pure, sweet joy, which is why it’s usually aimed toward children.

Between Halo-Halo and Iskrambol, the Philippines is full of shaved ice options. But Iskrambol is a uniquely nostalgic treat that will easily thrill you, no matter your age.

Equipment

  • shaved ice machine
  • ice cube tray

Ingredients
  

  • 1 can condensed milk
  • 4 cups water
  • banana extract/essence
  • pink or red food coloring
  • milk powder
  • chocolate syrup
  • mini marshmallows

Instructions
 

  • In a large bowl, combine water, condensed milk, a drop of banana extract, and enough food coloring to make the liquid pink.
  • Pour in an ice cube tray and freeze overnight.
  • Once frozen, using an ice shaver, shave ice and place in individual glasses.
  • Top with milk powder, chocolate syrup and marshmallows. Enjoy right away!
