In my “Lemon Dishes from Around the World” series, I learned about Polish lemon gelatin called szpajza. This refreshing, elegantly flavored dessert is very popular in Poland, and for good reason. The lemon flavor is pleasant and sure to be enjoyed by anyone with a sweet tooth. 

This szpajza recipe comes from Mary, who is from the city of Poznań in Poland. Although this dessert comes in many flavors, such as chocolate or strawberry, the most popular one is lemon. It is very popular throughout the southwestern part of Poland called Silesia, as it appears at every wedding and birthday celebration. The first time Mary tried szpajza was in a café, and she has loved it ever since. As a huge lemon fan, this gelatin is heaven, and she recommends it to anyone who loves lemons and marshmallow-textured desserts. 

Made from whipped eggs with sugar, lemon juice, and gelatin, szpajza is best served cold with whipped cream and fruit. Even though I accidentally used too much water and messed up the consistency of my szpajza, I still enjoyed the sweet, refreshing taste. It isn’t too sour, making it a more desirable lemon option for those who may not like the sourness of this yellow fruit.  

If you want to expand your palate to include more fruits, the lemon is a wonderful option since it is used in so many dishes. Szpajza is a safe, sweet, tasty dessert you are sure to love. It is also an excellent alternative to many heavier flavors and desserts, such as chocolate cake or ice cream! 

Overall, this lemon gelatin dish was fluffy, lemony, and elegant. I truly enjoyed this beautiful yellow dessert. Be sure to follow the exact measurements when making szpajza, and you’ll have a wonderfully cooling dessert perfect for warm weather.

Ingredients
  

  • 5 eggs
  • 5 Tbsp sugar
  • 5 tsp gelatin
  • ½ cup water
  • 2 lemons juiced
  • fresh/dried fruits, nuts, chocolate, yogurt, etc. for topping (optional)

Instructions
 

  • Boil the water and add the gelatin, then add lemon juice - leave until cool.
  • Separate egg yolks from whites.
  • Mix yolks with sugar.
  • Beat egg whites to a thick "cloud".
  • While mixing whites, very slowly add yolks.
  • Still mixing, add gelatin mixture.
  • Pour the mixture into 6 smaller bowls.
  • Add decoration and put the desserts into fridge.
  • Chill until thick and set, then serve!
