Watermelon Gazpacho

Ingredients

  • 2 cups watermelon diced into ¼ inch cubes
  • 2 cups pear juice
  • 2 Tbsp olive oil
  • 2 cups canteloupe diced
  • 1 seedless, or seeded, cucumber diced
  • 1 small red pepper diced
  • 1 small sweet onion diced
  • 3 Tbsp lime juice
  • 2 Tbsp fresh parsley or cilantro chopped

Instructions

  • Process ½ cup of watermelon, along with the pear juice and oil, in a blender or food processor until pureed.
  • Transfer to a medium bowl, along with remaining ingredients. Season with salt and pepper to taste.
  • Refrigerate until ready to serve. Enjoy cold!
