Pèsols Estofats

Ingredients

  • 250 g frozen peas
  • 1 onion finely chopped
  • 1 red pepper finely chopped
  • any other leftover veggies you may have finely chopped
  • vegetable stock cube
  • salt to taste
  • 1-2 bay leaves
  • pinch thyme and/or oregano
  • 1 clove garlic minced
  • fried egg for serving, optional
  • bread for serving, optional

Instructions

  • Heat a small amount of olive oil in a saucepan. Add the onion. Cover with the lid and cook a few minutes in low heat. Don't let it brown.
  • Then add the peas, salt, herbs (bay leaves, thyme and oregano).
  • Add any other veggies/seasonings as desired. Then add the water. You only want enough to cover the ingredients.
  • Then cover the saucepan. Once boiling, turn the heat down to low, and cook slowly. It should be enough liquid that the food won't burn. It takes about 20-30 minutes cooking slowly, and it's done.
  • If using, serve with a fried egg on top and bread to soak up juices.
