Instructions
Heat a small amount of olive oil in a saucepan. Add the onion. Cover with the lid and cook a few minutes in low heat. Don't let it brown.
Then add the peas, salt, herbs (bay leaves, thyme and oregano).
Add any other veggies/seasonings as desired. Then add the water. You only want enough to cover the ingredients.
Then cover the saucepan. Once boiling, turn the heat down to low, and cook slowly. It should be enough liquid that the food won't burn. It takes about 20-30 minutes cooking slowly, and it's done.
If using, serve with a fried egg on top and bread to soak up juices.
