Kottu

Ingredients

  • 3 roti chopped
  • 1 onion finely chopped
  • 1 cup sweet peppers chopped
  • ½ cup peas frozen
  • 1 Tbsp fennel seeds (saunf)
  • 1 tsp chili powder
  • 1 Tbsp coriander powder (malli podi)
  • 1 tsp garam masala
  • 1 Tbsp ketchup
  • 1 tsp soy sauce
  • salt to taste
  • 1 Tbsp oil
  • coriander leaves for garnishing

Instructions

  • Heat oil in a kadai. Add fennel seeds and allow them to pop.
  • Add onions, peppers, and mix well. Cook them for 2 mins.
  • Add salt, chili powder, coriander powder, garam masala powder, and mix well.
  • Add frozen peas and toss well—Cook for 2 mins.
  • Add ketchup, soy sauce and mix well. Add in roti and mix well.
  • Once everything is mixed, take a sharp edge steel cup and press it against the roti to make them smaller, and this process is actually the kottu part.
  • Garnish with coriander leaves and serve hot.
