Thinly slice scallions.
Chop garlic, onion, and chili (if using).
Mash the tofu with fork, then combine with corned beef, eggs, scallions, garlics, onion, chili, and salt & pepper until it comes together.
Lay out a spring roll wrapper and wet the edges to encourage sticking so they don't open up while frying. Place a scoop of filling toward the bottom, center. Fold edges over and the wrap up like an envelope. Repeat for the rest of the filling.
Heat oil in medium pan. Add martabak tahu and fry on each side until golden brown. Serve warm!
