Koosa Wu Beidh
Ingredients
1-2
small-medium sized zucchinis
diced
½
a yellow onion
diced
2
eggs
beat with salt and pepper to taste
fresh parsley or cilantro
chopped
fresh tomato slices
for serving
green olives
for serving
flatbread
for serving
Instructions
Sauté onion in some oil in a pan over medium heat.
Add zucchini to the onions, cook them till they get soft.
Once your zucchini is soft add the egg mixture and make sure you mix the eggs very well with the zucchini.
When everything is cooked, turn off the heat, add chopped herbs.
Eat it hot with sliced salted tomatoes and green olives and use flatbread to scope the mixture!
