Koosa Wu Beidh

Ingredients

  • 1-2 small-medium sized zucchinis diced
  • ½ a yellow onion diced
  • 2 eggs beat with salt and pepper to taste
  • fresh parsley or cilantro chopped
  • fresh tomato slices for serving
  • green olives for serving
  • flatbread for serving

Instructions

  • Sauté onion in some oil in a pan over medium heat.
  • Add zucchini to the onions, cook them till they get soft.
  • Once your zucchini is soft add the egg mixture and make sure you mix the eggs very well with the zucchini.
  • When everything is cooked, turn off the heat, add chopped herbs.
  • Eat it hot with sliced salted tomatoes and green olives and use flatbread to scope the mixture!
