Egg Floss

Ingredients

  • 3 Egg Yolks
  • 1.5 Egg Whites
  • 1/3 tsp Vinegar
  • Pinch of Salt
  • Oil for Frying

Instructions

  • Beat the egg yolks and whites
  • Pour your beaten egg yolks through a fine sieve into a bowl, preferably one with a small spout.
  • When your frying oil is hot, stir it to create a sort of swirl
  • Begin pouring in the egg yolk in a thin stream from a height of about 1 foot while continuing to stir in one direction.
  • Once you have added all the egg yolk, continue stirring when the bits of crunchy and light brown, remove and serve, ideally with shrimp of shrimp toasts!
