Cachorro Quente de Forma is Brazil’s answer to the humble hot dog — reimagined as a warm, saucy, oven-baked casserole piled onto crusty bread. While Brazil’s love affair with hot dogs dates back to the early 20th century, when German and Italian immigrants introduced sausage-making traditions to cities like São Paulo, Brazilians quickly made the dish their own. Street vendors began topping simple sausages with everything from mashed potatoes to corn, and eventually, batata palha (crispy shoestring potato sticks) became the iconic finishing touch found on cachorro quente carts across the country.

Cachorro Quente de Forma takes this street-food classic and turns it into a shareable, family-style meal. Sliced hot dogs, bell peppers, and tomatoes are layered in a baking dish with oregano, margarine, and tomato sauce, then covered and gently steamed on the stovetop until everything turns soft and saucy. The result is piled generously into halved pão francês or baguette, always finished with mayo, ketchup, mustard, and a hearty sprinkle of batata palha for crunch.

This dish reflects a broader theme in Brazilian home cooking: taking inexpensive, accessible ingredients and transforming them into something communal and comforting. Cachorro Quente de Forma

Ingredients
  

  • tomatoes sliced into half-moons
  • colorful bell peppers cut into thin strips
  • onion sliced into half-moons
  • bacon finely chopped, optional
  • hot dog sausages cut in half
  • tomato sauce
  • oregano
  • margerine or butter
  • black pepper
  • pão francês or baguette
  • batata palha for serving
  • ketchup, mayo, mustard for serving

Instructions
 

  • Assemble everything in a baking dish in layers. Sprinkle plenty of oregano.
  • Add small pieces of margarine spread throughout the dish, pour tomato sauce over everything, and add a little bit of water. Top everything with black pepper.
  • Cover with aluminum foil or another pan (to trap the steam). Place it on the stovetop over low heat (using two burners if possible) or in a 350℉ oven and monitor the cooking process (about 15–20 minutes).
  • Slice your bread in half (but not all the way through) and spread a thin layer of mayo. Then fill with vegetables and sausages.
  • Top with ketchup, mustard, and a lot of the batata palha.
