Chłodnik Ogórkowy
Cold Cucumber Soup

POLAND

This summer I’m determined to eat more cold soups, and this is one everyone should defiitely be giving a try.
Chłodnik Ogórkowy, or Polish cold cucumber soup, is a beloved traditional dish known for its refreshing flavor and simple preparation. Made with fresh cucumbers, radishes, dill, chives, garlic, and kefir, this chilled soup is a staple of Polish summer cooking. Unlike many soups that require hours of simmering, Chłodnik Ogórkowy is a true no-cook dish, relying on fresh ingredients and refrigeration rather than heat to create its distinctive taste.
For generations, Polish families have turned to this cool and creamy soup during the warmest months of the year, celebrating seasonal produce while avoiding the need to heat up the kitchen.

Cold soups have a long history throughout Central and Eastern Europe. Before modern refrigeration, people often sought ways to create refreshing meals during hot weather using dairy products, fresh vegetables, and herbs harvested directly from home gardens.
In Poland, chilled soups known as “chłodniki” became particularly popular. The word “chłodnik” comes from the Polish word chłód, meaning coolness or cold. While beet-based chłodnik is perhaps the most famous variety, cucumber versions have been enjoyed for centuries wherever fresh cucumbers were abundant.
These soups were practical, economical, and ideal for rural households that relied on seasonal ingredients.

One of the most appealing aspects of Chłodnik Ogórkowy is that it requires no cooking at all. Every ingredient is used fresh, preserving its natural flavor and texture.
The soup is traditionally prepared by grating cucumbers and radishes, chopping herbs, mixing everything with kefir or buttermilk, and allowing the mixture to chill. This simple method highlights the quality of the ingredients rather than complicated cooking techniques.
Long before air conditioning became common, no-cook recipes like Chłodnik Ogórkowy offered a practical solution for staying comfortable during hot summer days. Home cooks could prepare a nourishing meal without lighting a stove or oven.

Kefir plays a central role in many traditional Polish cold soups. This fermented dairy beverage has been consumed across Eastern Europe for centuries and is prized for its tangy flavor and creamy consistency.
In Chłodnik Ogórkowy, kefir serves as the base that ties all the ingredients together. Its refreshing character complements the crisp cucumbers, peppery radishes, and fragrant herbs. Some households use natural yogurt or buttermilk instead, but the goal remains the same: creating a cool, satisfying soup perfect for summer dining.

Today, Chłodnik Ogórkowy remains a favorite Polish no-cook recipe enjoyed across the country and beyond. Its simple preparation, refreshing taste, and connection to seasonal ingredients make it a timeless summer classic.
Whether served as a light lunch, starter, or cooling dinner on a warm evening, this traditional cold cucumber soup continues to demonstrate how fresh ingredients and simple methods can create a truly memorable dish.
