Chicken hearts, inexpensive and widely available, became a staple of this resourceful cooking tradition.

By the 20th century, espetinhos had become a fixture of Brazilian street food culture, particularly in the southern states of São Paulo, Paraná, and Rio Grande do Sul — regions known for their deep churrasco traditions. Weekend street fairs known as feiras became synonymous with the sight of vendors fanning charcoal flames beneath rows of skewered hearts.
The dish gained national popularity as Brazilian urbanization brought diverse regional food cultures into major cities. Today, espetinhos de coração are sold everywhere from high-energy São Paulo night markets to quiet neighborhood barbecues, beloved by all social classes as the ultimate expression of Brazilian communal eating.
