Tamale Pie is a comforting Mexican-American casserole that brings together the bold, smoky flavors of traditional tamales in an easy, crowd-pleasing baked dish. In Erin’s family, this hearty recipe has become a beloved birthday tradition — proof that the best celebrations are built around good food and even better memories.

This recipe starts with a savory base of ground beef, yellow onion, and garlic sautéed in oil until deeply fragrant. Chili powder, salt, a generous splash of Tapatío hot sauce, and a can of juicy peeled tomatoes transform the meat into a richly spiced filling that simmers low and slow for maximum flavor.

The magic happens when cornmeal and milk are stirred in, creating that signature tamale-like texture. Creamed corn adds natural sweetness and body, while pitted black olives lend a briny, savory depth that sets this dish apart.

Everything comes together in one pot — a dutch oven or high-sided sauté pan works perfectly. After a 15-minute simmer with the tomatoes and spices, then another 15 minutes once the cornmeal is added, the casserole bakes uncovered at 325°F for one full hour. The result is a golden, set, deeply satisfying dish that slices beautifully.

Ingredients
  

  • 3-4 Tbsp oil
  • 1 large yellow onion chopped
  • 1 clove garlic minced
  • 1 lb ground beef
  • 2 tsp chili powder
  • 1 tsp salt
  • couple dahses hot sauce
  • 1 12 oz. can peeled tomatoes undrained and slightly broken up with hands
  • 1 cup cornmeal
  • 1 cup milk
  • 1 can creamed corn
  • 1 cup pitted black olives drained
  • sour cream for serving

Instructions
 

  • Heat oil in a high-sided saute pan or dutch oven over medium heat. Add onion and saute until translucent; add garlic and saute for a few more minutes until fragrant.
  • Add beef and brown; drain any excess fat.
  • Add salt, chili powder, hot sauce and tomatoes (whole can, juice and all); reduce heat to medium-low, cover and cook for 15 minutes, stirring occasionally
  • Stir in cornmeal and milk, cover and cook for an additional 15 minutes, stirring occasionally.
  • Stir in creamed corn and olives.
  • Transfer to baking dish if you used a saute pan; leave in dutch oven otherwise. Bake at 325℉ uncovered for one hour.
  • Serve with a dollop of sour cream.
