This inventive dish is a genius hybrid of French toast and frittata. A base of rye bread — crusts removed and dipped in beaten egg — lines a small baking pan, creating a golden, custardy foundation. A savory egg mixture loaded with fresh spinach, asparagus, cherry tomatoes, green onions, and minced garlic is then poured evenly over the bread and baked until perfectly set. “Aunt Debbie’s Make-Up”

Ingredients
  

  • 3-4 slices rye bread crust removed
  • 3-4 eggs beaten, salted to taste
  • 1 small handful spinach torn
  • ½ cup asparagus cut into bite-size pieces
  • 1 clove garlic minces
  • ½ cup cherry tomatoes diced
  • 2 green onions chopped
  • ½ cup grated cheese like cheddar

Instructions
 

  • Lay bread on bottom of a small pan (9 inch or so) so that the bottom is completely covered with a single layer, dipping in beaten egg before laying. May need to tear small pieces to fit in spaces so that the pan is fully covered.
  • Mix the chopped veggies in with the rest of the egg and pour over bread so that it spreads across top evenly.
  • Sprinkle cheese on top.
  • Bake at 350℉ until eggs are set, about 20 mins. The rough idea is a cross between french toast and a frittata.
  • Slice into sections to serve.
