Curry Spiced Omelette

Ingredients
  

  • 2 eggs
  • ¼ tsp salt adjust to taste
  • ¼ tsp yellow curry powder adjust to taste
  • 1 dash red chili flakes
  • 1 dash paprika optional
  • butter
  • ½-1 tsp nutritional yeast adjust to taste
  • 2 Tbsp plain yogurt
  • 1 sprig fresh dill broken into small pieces, stem removed
  • lemon juice and/or olive oil optional

Instructions
 

  • Crack eggs into a bowl and whisk thoroughly with salt, curry blend, chili flake, and paprika if desired.
  • In a skillet, melt 1 tbsp butter cut into 2-4 smaller pieces. Cutting butter into smaller pieces allows it to melt evenly without browning.
  • When butter begins to foam, add egg mixture. Cook over low heat to desired tenderness. Fold omelette and transfer to plate.
  • Top omelette with 3-4 dollops of plain yogurt, each of which should be approx. 1- 1 ½ tsp in measurement. Then, sprinkle omelette lightly with nutritional yeast. (you can always add more, if needed, but too much can overpower the other flavors!) Finish with small pieces of fresh dill sprinkled atop the omelette. You can also add a little squeeze of lemon juice and/or a drizzle of olive oil if desired.
