Fried Egg & Sauerkraut Oatmeal

Servings 1

Ingredients
  

  • cup quick cooking steel cut oats/rolled oats
  • 2 tsp soy sauce
  • 1-2 tsp butter or ghee or oil, for frying eggs
  • 1-2 eggs
  • ¼-⅓ cup sauerkraut
  • 2-3 dashes sesame oil
  • salt & pepper to taste

Instructions
 

  • Start by cooking your oats with water, per package directions either on the stovetop or in the microwave (your preference).
  • While that is cooking, fry up the egg(s) on the stove with some butter and salt them to taste.
  • Once the oatmeal is done, stir in the soy sauce. The oatmeal shouldn't be tacky or thick, it should be stir-able and creamy, so if you need to add a bit more water and cook a little longer, do that.
  • Pour into a bowl, then layer on the toppings, starting with the sauerkraut, then the fried egg(s), the dashes of sesame oil, and cracked black pepper on top.
