Anna’s oatmeal recipe is inspired by one of my favorite desserts of all time: carrot cake!

Carrot Cake Porridge is a cozy, comforting oatmeal recipe that brings the flavors of classic carrot cake to your breakfast bowl. Made with creamy oats, shredded carrots, juicy raisins, and warm spices like cinnamon and nutmeg, this dish is a naturally sweet and satisfying start to the day. To make Carrot Cake Porridge, rolled oats are gently simmered with milk or your favorite plant-based alternative until soft and creamy. Carrot Cake Porridge

Servings 1

Ingredients
  

  • 100 g oats
  • 350 ml soy or oat milk mixed with 350 ml of water
  • 1 carrot grated
  • 1 tsp ground cinnamon
  • 1 dash ground nutmeg
  • 3-4 Tbsp raisins
  • 1 pinch salt
  • orange zest to taste, optional
  • maple syrup, honey, or sweetener of choice to taste
  • walnuts or pecans chopped, for topping

Instructions
 

  • Put all ingredients apart from the sweetener and nuts in a saucepan.
  • Slowly bring to the boil, stirring regularly, then reduce the heat and cook gently for 5 mins. Add more liquid if/as needed to reach your desired consistency.
  • Turn off the heat and stir in the sweetener to your preferred sweetness level.
  • Pour into a bowl and finish with chopped nuts.
