Ensalada de Manzana

Ingredients
  

  • 2 big gala apples cut into bite sized cubes
  • 5 slices canned pineapple cut into smaller-than-bite sized pieces
  • ¾ cup pecan halves roughly chopped
  • ½ cup pineapple juice from the can
  • ¾ cup sour cream
  • 2 heaping tsp mayo
  • whole maraschino cherries for topping, optional

Instructions
 

  • Add the apples, pineapple, and pecans to a bowl (don’t mix yet).
  • In a separate bowl mix the sour cream and pineapple juice until combined, then add the mayo and mix again to thoroughly combine them.
  • Add liquid mixture to apple mixture and combine.
  • Refrigerate for at least an hour or until completely chilled (it is best eaten cold).
  • Top with cherries (if using) to serve.
