One-Pan Kielbasa & Pierogies

Ingredients
  

  • 1 lb kielbasa sliced into ½-inch rounds
  • 1 medium onion thinly sliced
  • 1 package frozen onion and potato pierogis no need to thaw
  • 2-3 Tbsp apricot jam
  • 1-2 Tbsp butter or oil
  • ¼-½ cup water or broth
  • salt & pepper to taste

Instructions
 

  • Heat butter or oil in a large deep skillet or saucepan over medium heat. Add kielbasa and cook 3–4 minutes, until lightly browned on each side. Push to one side, add onions, and cook another 3–4 minutes until softened.
  • Arrange frozen pierogis on top of the kielbasa and onions. Pour in the water or broth, cover tightly with a lid, and steam for 6–8 minutes, until pierogis are heated through.
  • Remove the lid, stir in apricot jam, and gently toss everything so the pierogis, kielbasa, and onions are coated. Let cook uncovered for another 2–3 minutes to thicken the glaze slightly.
  • Add salt and pepper to taste. Serve hot.
