This Buffalo Chickpea Wrap is a bold, flavorful fusion perfect for lunch or a quick dinner. Wrapped in a soft flour tortilla, this savory mash is layered with gorgonzola cheese, fresh vegetables like lettuce and tomato, and a generous drizzle of creamy ranch dressing to cool the heat and tie everything together.

Buffalo Chickpea Wrap

Ingredients
  

  • 1 large/burrito size flour tortilla
  • ½ cup chickpeas
  • ¼ red onion chopped
  • 2 stalks celery chopped
  • 2 Tbsp buffalo sauce or to your desired spiciness
  • 1 tsp lemon pepper seasoning
  • 1 Tbsp ranch dressing
  • 1 Tbsp crumbled gorgonzola cheese
  • butter lettuce leaves
  • thinly sliced tomato

Instructions
 

  • Warm the chickpeas up, and then mash them a little bit with a masher or a fork — you can leave them a bit chunky.
  • To the chickpeas add the onion, celery, buffalo sauce, and lemon pepper seasoning to taste. Make sure everything is nicely incorporated.
  • Warm a tortilla and spread the chickpea mixture on the tortilla.
  • Drizzle with ranch and sprinkle with gorgonzola. Place lettuce and tomato on top. wrap up like a burrito.
  • Wrap up like a burrito and serve!
