Toasts aux Sardines

Ingredients
  

  • bread sliced
  • 1 tin sardines
  • ¼ stick room temp butter more or less as needed
  • salt & pepper to taste
  • comté cheese grated
  • chili flakes optional

Instructions
 

  • Drain the sardines and prep them how you like. Some people eat them straight from the tin. You can also remove the scales and skin, and open them to take out the bones, even the thin almost invisible ones.
  • Put the sardines in a shallow dish and add half of the butter with salt and pepper and mash with a fork. Add butter little by little until you get a smooth paste. You may need less or more butter depending on your taste.
  • In a pan, toast one side of the bread. Remove.
  • Spread a thick layer of “beurre de sardine” on the untoasted side of the bread and cover with grated cheese. Add more ground black pepper on top or some chili flakes if you feel like going spicy.
  • Place under the grill/broiler of the oven or in an air fryer until the cheese is crispy and/or slightly golden.
