Ilse’s favorite childhood snack comes in the form of this fancy toast that is deceptively simple!

Dutch Gebakje, often affectionately referred to as “pastry toast,” is a unique savory snack that blends fresh and rich flavors in a simple, open-faced presentation. This traditional Dutch treat typically features a crisp slice of toast generously layered with slices of Gouda cheese, juicy tomato, and refreshing cucumber. What sets it apart is the unexpected flavor boost from a few dashes of Maggi seasoning liquid and a light drizzle of creamy mayonnaise on top. The combination is salty, tangy, creamy, and crunchy—perfect for breakfast, brunch, or a mid-day bite.

Popular in Dutch households and bakeries, Gebakje has evolved into a nostalgic comfort food that celebrates local ingredients and no-fuss preparation. Gouda cheese brings depth and creaminess, while the tomato and cucumber provide contrast and freshness. The Maggi adds umami punch, enhancing the overall taste without overpowering it.

Gebakje is also highly customizable—some add hard-boiled egg slices, herbs, or even a sprinkle of pepper for extra flair. It’s a great vegetarian-friendly option that’s quick to make and packed with flavor.

Whether you’re exploring Dutch cuisine or seeking a new snack idea, Dutch pastry toast delivers a balanced and delicious bite rooted in local flavor and tradition.
