Tofu Sauce Veggie Pasta

Equipment

  • blender

Ingredients
  

  • 1 carton silken or soft tofu
  • salt & pepper to taste
  • ¼ cup nutritional yeast or to taste
  • 1 onion chopped
  • 1-5 cloves garlic pressed, use as much/little as you want
  • 1 package chickpea pasta
  • vegetables of choice such as broccoli and/or spinach
  • lemon

Instructions
 

  • Saute onion and garlic until soft and starting to brown.
  • Blend tofu, sautéed onion and garlic, nutritional yeast, salt and pepper, and splash of water to desired consistency. Season additionally to taste.
  • Cook pasta according to package and blanch chosen vegetables for the last 5ish minutes of pasta cooking (or alternatively roast the vegetables).
  • Drain pasta and veg, combine in pot with sauce, stir until coated and hot.
  • Serve with a generous squeeze of lemon!
