This Instant Pot salmon rice bowl is the perfect one-pot meal that’s simple, satisfying, and full of flavor. Made with frozen salmon, jasmine or basmati rice, and a few pantry staples, this hands-off recipe lets your Instant Pot do all the work. Fish Rice

Servings 2

Equipment

  • instant pot

Ingredients

  • 2 frozen salmon fillets 4-6 oz
  • 1 cup basmati rice
  • cups water
  • 1 tsp salt
  • 1 Tbsp ghee or butter
  • 2 cups fresh spinach
  • toasted sesame seed oil
  • soy sauce
  • kewpie mayo
  • furikake seasoning

Instructions

  • Quickly rinse your basmati rice, or follow your preferred rice’s prep instructions. Add water, salt, ghee/butter to IP insert.
  • Place still frozen salmon fillets on top. Seal, cook 3 minutes with natural release, allowing the IP to seal and unseal on its own time. This takes about 20-30 minutes depending on the size of your pot.
  • When pot naturally unseals, prepare a bowl with a cup of tender spinach drizzled with the sesame oil. Scoop hot rice on top, allow to wilt. The spinach will not be completely cooked by this process and will have a bit of crisp left.
  • Top with soy sauce, mayo, and furikake before serving.
