Ingredients
  

For homemade taco seasoning (or buy it pre-made)

  • 1 Tbsp chili
  • ¼ tsp garlic powder
  • ¼ tsp onion powder
  • ¼ tsp crushed red pepper flakes
  • ¼ tsp dried oregano
  • ½ tsp paprika
  • ½-1 tsp cumin
  • 1 tsp salt
  • 1 tsp black pepper

For noodles

  • 1 pack ramen no seasoning packet
  • ⅓-½ cup ground beef or fake meat or tofu crumbles, etc.
  • shredded Mexican blend cheese
  • canned black beans drained
  • red onion diced
  • frozen corn thawed
  • sour cream
  • ketchup

Instructions
 

  • Make the taco seasoning by combining all the spices together and setting aside. Alternatively, you can use store-bought pre-made taco seasoning.
  • Boil a small pot of water. Break up the ramen into large chunks and boil for 3 minutes.
  • While the ramen is cooking, add meat crumbled in a small pan. Add enough water so it fills the bottom of the pan. Add a spoon or two of taco seasoning, to taste. Stir and let cook until the sauce is a little thick.
  • Scoop out some pasta water and set aside. Drain the ramen and put back in the pot. Add the cooked meat crumbles with sauce. Stir together until the ramen is coated in sauce.
  • Add a handful of cheese. Stir again. Add some reserved ramen water to melt the cheese and make creamy, if needed. Repeat until it’s your preferred level of cheesiness.
  • Add a few spoons of black beans, corn, and diced red onion, to taste. Stir again.
  • Top with sour cream and ketchup to serve.
