Nehal introduced me to Ads Bi-Gebah, a traditional Egyptian lentil stew, known for its rich flavor, affordability, and nutritional benefits. This hearty dish is a staple in Egyptian households, especially during the colder months, offering warmth and sustenance with every spoonful.

Made primarily from brown lentils, this stew is slow-cooked with onions, garlic, tomatoes, and aromatic spices like cumin and coriander, which enhance its deep, comforting taste. Many Egyptians enjoy it with a drizzle of olive oil and a squeeze of lemon juice for added freshness. Some variations include blending the stew for a creamy texture, while others keep it chunky for a rustic feel.

Ingredients
  

  • ½ cup pre-soaked and washed brown lentils soak in water for 30 minutes
  • ghee or vegetable oil
  • 1 large onion diced
  • 2-3 cloves garlic plus 1-2 cloves for the aromatic oil, minced
  • 1 green chili finely chopped
  • 4 cups tomato juice
  • 2 Tbsp tomato puree
  • 1 maggi cube
  • ½ tsp sugar
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • 1 tsp cumin
  • 1 tsp ground coriander
  • salt & pepper to taste

Instructions
 

  • In a pot, sauté the onions in ghee or oil until they turn golden, then add minced garlic until they become aromatic, and sauté for a couple of minutes.
  • Then add the tomato juice and tomato puree, along with all your spices and Maggi cube, and stir everything, and leave the tomato for a couple of minutes until it thickens and some water evaporates.
  • Add the lentils to the pot and add a little bit of water, and cook the lentils over low to medium heat until they are cooked tender.
  • Meanwhile, make the aromatic oil. In a small pan, take some ghee (or oil), take about 1-2 cloves of minced garlic, and fry in the ghee until they turn aromatic. Add a pinch or two of coriander and stir for a couple of seconds.
  • Pour the aromatic oil on top of the lentils just before serving.
  • Enjoy warm!
