Mozzarella in Carrozza

Ingredients
  

  • 2 slices white sandwich bread
  • fresh mozzarella
  • 1-2 slices prosciutto cotto optional
  • 2 eggs
  • salt & pepper to taste
  • 1-2 Tbsp grated parmigiano reggiano
  • canola oil as needed

Instructions
 

  • Cut the crusts from the bread slices. Set aside.
  • Slice the mozzarella into 3-4 slices (4-5mm) and drain the excess moisture with some paper towels.
  • In a bowl, whisk the eggs with a pinch of salt, grated parmigiano, and black pepper.
  • Place mozzarella and prosciutto (if using), on one slice of bread, cover with another slice, and press gently to seal, especially around the edges.
  • Dip the sandwiches into the seasoned egg mixture, allowing any excess to drip off.
  • In a large pan, heat oil to 175°C (347°F) and fry the sandwich for about 1 minute per side, or until golden brown and the cheese gets melty. Remove the sandwich and place it on a plate lined with paper towels, to absorb excess oil.
  • Enjoy the sandwich when it is still warm!
