Tajine Jelbana

Ingredients
  

  • 2 cups green peas
  • 4 artichoke bottoms
  • 1 onion
  • 1 Tbsp tomato paste
  • 3 cloves garlic
  • 4 Tbsp olive oil
  • ¼ cup fresh cilantro chopped
  • ¼ cup fresh parsley chopped
  • tsp salt
  • ¼ tsp black pepper
  • ½ tsp turmeric
  • ½ tsp paprika
  • ¼ tsp cumin
  • ½ tsp ginger powder
  • ½ tsp coriander powder
  • tsp cinnamon
  • tsp nutmeg
  • ½ tsp sugar

Instructions
 

  • In a food processor, blend the garlic and half of the onion.
  • Finely dice the other half of the onion then add it to the onion and garlic purée.
  • Add the onions and garlic to a pot with 2 tbsp of olive oil, then cook for 15 minutes over medium heat, stirring frequently.
  • Add the spices, sugar, and the tomato paste and cook for 5 minutes until fragrant, stirring constantly.
  • Add 1 cup of water, then stir everything and bring to a boil.
  • Add the green peas and bring to a boil.
  • Add the artichoke hearts and the chopped cilantro and chopped parsley, then cover and cook for 10 minutes, stirring occasionally.
  • Take the lid off and add 2 tbsp of olive oil then cook for another 5 minutes, stirring constantly.
  • Serve with bread and garnish with a pinch of chopped parsley and a drizzle of olive oil.
