Creamed Peas & Potatoes

Ingredients
  

  • cup all purpose flour
  • 2 cups milk
  • 3 Tbsp butter
  • 12 oz frozen peas
  • salt & pepper to taste
  • boiled potatoes for serving

Instructions
 

  • Melt butter on medium heat. Do not brown.
  • Add flour and stir to form a paste/roux. Let it cook on medium heat for 1-2 min but do not let it get browned. (you want a blonde roux).
  • Add 1 cup of the milk and stir. You will have some lumps but keep stirring and smashing the flour lumps against the bottom of the pan while stirring. Add the rest of the milk slowly while still smashing and stirring any lumps of the roux.
  • If you are happy with the thickness then microwave and drain the peas using the cook time suggested on package and then add.
  • Season to taste. Serve over potatoes.
