  4. Sweeten and Flavor: Once the milk has thickened, add sugar and ground cardamom. Stir well and cook for another 10-15 minutes until the sugar dissolves and the mixture reaches a halwa-like consistency.

Gajar ka Halwa

Ingredients
  

  • ½ kg carrots
  • 2 cups milk
  • ½ cup sugar
  • ½ tsp cardamom powder
  • 2 Tbsp ghee
  • mixed nuts
  • raisins

Instructions
 

  • Peel and grate the carrots.
  • Fry the nuts in a little ghee until slightly golden. Add the raisins to fry and plump them up a little. Set aside.
  • In a pot, bring the milk to a boil.
  • Add the carrots and cook on medium heat, stirring often.
  • When the milk has completely evaporated, add the sugar and stir well.
  • Cook until half the moisture evaporates and then add the ghee.
  • Cook the halwa until the moisture evaporates completely.
  • When it is done it will the thick, but still moist. Stir in the cardamom powder.
  • Serve garnished with nuts and raisins.
