Chicha de Arroz con Piña

Ingredients
  

  • 1 pineapple shell a little flesh still attached
  • 180 g rice
  • 120 g sugar
  • 1-2 cinnamon sticks
  • 2-4 cloves

Instructions
 

  • Put pineapple bits in a pot and cover almost all the way with water. Boil for 20 minutes.
  • In a separate pot, add 2 cups of water and the spices and let it come up to a boil to infuse the water with the spice. Cook until the water turns a deep golden brown.
  • After 20 minutes, add the rice, sugar, and spiced water (strained) to the pot with the pineapple and boil for 10 more minutes or until rice is really soft.
  • Cool before blending.
  • In a blender, add everything from the pot and blend until smooth.
  • Strain out the pulp.
  • Serve cold!
