Fatima’s take on instant noodles is like nothing I’ve ever had! Vine Leaf Indomie

Ingredients
  

  • 1 packet vegetable indomie
  • 1 Tbsp diced onions
  • 1 Tbsp diced tomatoes
  • 1 Tbsp chopped fresh parsley
  • a few leaves fresh mint chopped
  • 1 tsp tomato paste
  • salt & pepper to taste
  • red chili flakes to taste
  • ½-1 lemon juiced
  • 1 tsp sumac
  • 1 pinch espresso powder
  • 1 Tbsp olive oil
  • 1 Tbsp pomegranate molasses

Instructions
 

  • Cook your indomie per package direction. Drain and save half a cup of the water.
  • Sautée onions until translucent then add the tomatoes and tomato paste and seasoning and cook for a couple of minutes.
  • Add the indomie water and simmer for a couple of minutes until flavors are well combined.
  • Add in your noodles, mix and turn off the heat then add the herbs and olive oil and finish with the pomegranate molasses.
  • Serve!
