Cauliflower with Cheese Sauce

Ingredients
  

  • 1 head of cauliflower
  • 3-4 Tbsp butter
  • 3-4 Tbsp flour
  • 1 8 oz package of softened cream cheese
  • 1 cup chicken broth
  • milk as needed
  • dash liquid maggi
  • dash nutmeg
  • white pepper to taste
  • cooking liquid from the cauliflower

Instructions
 

  • Start with one medium to large cauliflower trim it of all its leaves and the stem.
  • Place it whole in a pot with enough water to go about half way up the side bring it to a boil covered. Cook until it can be poked with a fork and it feels tender but not mushy.
  • Meanwhile in another pot start a basic roux with butter and flour.
  • Add softened cream cheese stir until as smooth as possible.
  • Add chicken broth, stir constantly, then milk to get to thick pourable consistency.
  • Grate in nutmeg, just a dash, just a few dashes of Maggi to taste, a little white pepper and just a bit of the cooking water to make it thin enough to pour.
  • Take the finished hot cauliflower in a large bowl and pour the finished sauce over the top. Serve!
