While this is a beloved childhood memory dish for Bettina, I gotta say this was a first for me. Swiss Party Fillet, wrapped in crispy bacon and topped with a savory cream sauce, is the perfect dish for any special occasion. This premium cut of beef is wrapped in smoky, crispy bacon, which enhances the fillet’s tender texture and juicy flavor. The combination of the lean fillet and the bacon creates a delicious contrast, while the rich, savory cream topping adds an extra layer of indulgence.

Ingredients
  

  • 500 g pork filet/loin
  • ½ tsp paprika
  • ½ tsp salt
  • 12 tranches bacon
  • ½ cup heavy cream
  • Tbsp ketchup
  • 1 Tbsp cognac
  • black pepper to taste

Instructions
 

  • Preheat oven to 400℉.
  • Cut the meat into 12 medallions of equal thickness. Season the medallions on both sides with paprika, salt and pepper.
  • Wrap the medallions in bacon and place them next to each other in a prepared dish or pan.
  • Roast approx. 25 minutes in the lower half of the oven.
  • Whip the cream until stiff, mix with ketchup, cognac and pepper.
  • Spread over the meat and serve.
