When Anna and Nikolaj submitted this traditional onion tart, I knew it was perfect for the Onion episode! Bülledünne is a beloved German snack that combines thinly sliced, bacon with flavorful seasonings, but one of the standout ingredients in this dish is the onion. The onions add a depth of flavor that perfectly complements the savory, tender bacon. Typically, the onions are either incorporated into the seasoning mix or used as a topping, adding both sweetness and a bit of sharpness that balances the richness of the bacon.

The thin slices of Bülledünne are often seasoned with a variety of spices, and the inclusion of onion brings an extra layer of complexity to the flavor profile. Ingredients
  

For the dough

  • 200 g flour
  • 2.5 g instant rise yeast
  • ½ tsp salt
  • 1 Tbsp oil
  • ½ cup lukewarm water

For the filling

  • 2 large milld onions
  • 1 egg
  • ¼ cup cream
  • ¼ cup sour cream
  • 75 g bacon cut into small pieces
  • salt, pepper, and a little bit of ground cumin and nutmeg

Instructions
 

  • Mix together the yeast and the flour. Then mix with all the other ingredients for the dough and let it sit for at least one hour.
  • Slice peeled onions into thin rings, either with a slicer or a knife.
  • Fry the bacon and the onions in a pan until they are translucent but not to brown (you can also leave some bacon on the side and sprinkle it over the pie at the end). Let the onions cool a little bit.
  • Mix egg, cream, and sour cream and season it with salt, pepper, cumin and nutmeg, then mix it with the onions.
  • Roll out the dough and put it on a baking tray, form a little edge and pour the mixture on top. Now you could sprinkle the rest of the bacon on top if you saved some.
  • Bake it at 205℃ (or 400℉) for around 25-30 minutes.
  • Enjoy when it’s still warm!
