Stir-Fried Cabbage

Ingredients
  

  • 5 slices bacon sliced into strips
  • 1 lb pork loin cut into ½ in. cubes
  • 1 large head green cabbage hand cut into ½ - 2 in. pieces or so
  • ¼ cup soy sauce
  • 1 Tbsp sugar
  • 1-2 tsp rice wine/mirin
  • 2-3 cloves garlic thinly sliced, optional
  • 1-2 dried red chilis optional
  • 1 green onion chopped, optional
  • salt & pepper to taste
  • cooked white rice for serving

Instructions
 

  • In a wok over high heat, add the sliced bacon. Sear until crispy. Remove from wok and set aside. Drain bacon grease - leaving 1-2 tbsp in the wok.
  • Add pork loin and sear until cooked. Remove from wok and set aside.
  • If using, add the garlic, green onion, and chili, turn down the heat to medium, and stir-fry for a minute, taking care not to burn the garlic. Remove from wok and set aside.
  • Add the cabbage, sugar, soy sauce, and rice wine. Turn up the heat to high, cover the lid and let the cabbage cook for 1-2 minutes. Uncover the lid, and stir so the cabbage on the bottom doesn't burn. Cover the lid and cook for another 1-2 minutes. The cabbage should be wilted, but still slightly crunchy and caramelized. The cabbage should release some water mixing with the soy sauce liquid. Cook uncovered for 5-10 minutes, stirring occasionally to reduce the liquid a bit.
  • Add back in the bacon, pork, and other toppings (if used). Salt and pepper to taste. You may only need to add pepper as the soy sauce lends plenty of saltiness to the dish.
  • Serve hot over rice, but it is also good on its own.
