Oxana really threw me for a loop when she told me what this rice was cooked in! Peruvian Arroz Árabe is a delicious, unique dish that blends the richness of traditional Peruvian flavors with a surprising twist: Coca-Cola. Ingredients
  

  • 1 cup long-grain rice washed
  • 2 cups regular coca-cola
  • 100 g vermicelli or angel hair pasta, broken up into small pieces
  • 150 g walnuts or any nuts you like, chopped
  • 50 g bacon chopped, optional
  • 1 green onion chopped
  • 60 g raisins soaked in water for 10 mins
  • olive oil
  • pinch turmeric
  • salt to taste

Instructions
 

  • Fry the vermicelli with some olive oil in a pan until golden brown.
  • Remove the vermicelli and in the same pan with a bit more oil if needed, add the green onion, bacon (if using), nuts, raisins, and turmeric. Fry until you start to smell a nutty, toasty smell from the nuts.
  • Add the rice and toast for a couple seconds.
  • Add the coca cola and a pinch of salt. Stir to combine.
  • Wait until the liquid has gone and then turn down the heat to let the rice finish cooking. Stir back in the fried vermicelli.
  • Serve!
